Two requests, now, so I'll post it here in case I can convert more of
you poor benighted heathen who like Coke and Pepsi.
Heidi, Susan, Penny, others with small (or incipient) children--this is
a great recipe to make with kids, there's loads of steps they can do and
it comes out looking very impressive.
Amanda's Grandmother's Dr. Pepper Jello Recipe
1 6 oz. box cherry jello (the big size that calls for 4 cups of water)
2 c. boiling water
1 8 oz. package cream cheese (softened if you want)
1 16-oz. Dr. Pepper, chilled
Some mini marshmallows (optional)
Empty the jello into a mixing bowl, and pour in the two cups boiling
water as directed on the box. Stir for 2 minutes or whatever the box
says, until all the jello is dissolved. Add the cream cheese, and use a
fork to moosh it against the sides of the bowl until it's all in little
teeny pieces (some of it will melt, this is fine). [I add the cream
cheese at this stage because it's easier to moosh up in hot liquid than
in cooler liquid.]
Add the 16 ounces of Dr. Pepper (it's standing in for the 2 cups cold
water you would add if you followed the box). Pour it slowly, it'll fizz
a lot. Stir it in until the fizz on top is all red, no more Dr.
Pepper-brown.
Add in a couple handfuls of mini marshmallows, if you want. It's fine
with or without. If you're making this with a child, however, these are
*not* optional, and you must allow for the thirty or so that your child
will manage to sneak that will never make it into the jello.
Pour the whole thing into a pan and chill until set. How many it serves
depends on how big you cut your jello servings.
This was always a dessert at Grandmommy's. It comes out having two
layers; the cream cheese comes to the top. I have made it with Diet Dr.
Pepper, and that works fine, but the time I tried "light" cream cheese,
as God is my witness, the stuff *sank to the bottom.* Ugh. I have no
idea what that stuff is, but its resemblance to cream cheese is purely
visual. It tasted pretty bad, too.
This whole thing works pretty well with Sprite or 7-Up and lemon/lime
jello.
Enjoy! Let me know if anyone tries it. It's a beloved family favorite,
