G'day,

Well, there are a number of things which are typically Aussie -
pavlova is certainly one, although it depends on facilities to cook
them, and they can fail! (though almost none of mine have *g*!)

Another suggestion is lamingtons:

Or when I am short of time, I simply buy a sponge bar cake and
cut it into small squares insted of cooking the cake - then just dip
them in the choc icing and roll in coconut.

Another one, with a bit of history, is the Anzac biscuit:

Here is a simple version of the recipe:
Mix well
1 cup flour
1 cup rolled oats
2 Tbsp castor sugar

In a saucepan, melt
4 Tbsp butter
2 Tbsp golden syrup
1 flat tspn bi-carbonate of soda

Add the melted mixture to the dry ingredients and mix well.
Put dessertspoonfuls on to a cold greased slide or tray. Bake
about 20 minutes at about 180°C

Imagine there are flies buzzing around you in the heat haze of an
Aussie summer, with smoke from the nearby bush fires, and
enjoy!

Megan
