The Return of Ron towards the end of Part 1 makes sense as far as movie endings go.
Many times in movies, the story structure frequently has some sort of separation of the protagonist from his friend/ally/loved-one/and/or/romantic interest. Will they be reunited or stay forever apart!?! I don't know... I have to keep watching!
Some examples:
Luke and Han in Star Wars.
Shrek and Fiona/Donkey in Shrek.
Westly and Buttercup in The Princess Bride.
Ennis and Jack in Brokeback Mountain.
Hillary and Clint in Million Dollar Baby.
The Whalerider and her grandpa in Whalerider.
Will and Marcus in About a Boy.
Every romantic comedy.
So it seems the screenwriter thought the Ron's reunification with Harry/Hermione fits naturally to the ending of part 1 which may be the introduction of the story of The Tale of the Three Brothers as told by Xenophilius or read by Hermione or who/whatever the screenwriter thinks is best.
