Well, I heard that Rowling was going to publish a companion book for the series when/after the movie...does anyone know whether this is true? Because if she has boxfuls of notes, that's probably the only way we'll actually see all of them, unless the last few books are several volumes each.

  In the 60 minutes interview with JKR, she shows some of her 
  handwritten notes (of which she has boxes full) about the HP world.  
  There is a closeup of a piece of paper which says something like:

  Ghosts
  Gryffindor - Nearly Headless Nick
  Slytherin - the Bloody Baron
  Ravenclaw - the Grey Lady
  Hufflepuff - the Fat Friar

  I suspect that JKR has also created many more details of the 
  wizarding world that have not made it into the books.  We can only 
  hope to hear about them all someday!
