My vote on what she would see is thus: herself with friends.

Hermione, my fave character, has always struck me as being very lonley before she came to Hogwarts. She had her parents, but I doubt she had any friends.

Therefore, I believe that when she looked in to the mirror of Erised, I believe she would see herself with friends, perhaps Harry and Ron, and that she wouldn't be lonley anymore.

Make sense?
