Upon reflection, I think that Dumbledore simply knows his people very
well. Madam Pomfrey strikes me as a very trustworthy person, but one who
has her own priorities (the health and well-being of her charges) above
all else. Even if you told her that there might be a very good reason
for doing something she disapproves of, she'll still disapprove. If
Dumbledore knows he can't convince her of something, and knows he's
going to do it anyway, why let her hear about it? Alternately, in a
world with things like Veritaserum and other secret-inducing niceties up
its sleeve, perhaps Dumbledore is operating on a need-to-know basis for
her own protection?
