I think GoF explains this...

page 697, Hardback, US version:

"No spell can reawaken the dead," said Dumbledore heavily. "All that
would have happened is a kind of reverse echo. A shadow of the living
Cedric would have emerged from the wand...am I correct, Harry?"

"He spoke to me," Harry said.
...

"An echo," said Dumbledore, "which retained Cedric's appearance and
character. I am guessing other such forms appeared..."

So...I my understand it's like an echo of the person. It would explain
why Cedric, Lily, and James would know Harry, because they knew him in
real life. So when the person dies, their echo contains am memory of
Harry.
