GoF question and Lupin theory

I'm sure this has been debated in the past, but I really want to know what
the Durmstrang and Beauxbatons students do with their time during GoF.  They
appear during the first term, and there is evidence that the Durmstrang boat
and the Beauxbatons horses, not to mention Madame Maxime and Karkaroff, do
not leave Hogwarts for the duration of the tournament.  Do these students
attend classes?  If so, where?  How do the two foreign schools get on
without their headmasters for an entire year?

My theories regarding Lupin's transformation in PoA:
1) The total cop-out theory: Lupin was under such stress in the Shrieking
Shack that he completely forgot about the transformation and was therefore
able to unconsciously fend it off with distractions.  When the moon
appeared, the transformation jumped to the forefront of Lupin's mind and he
was forced to transform.
2) The precise time theory: Maybe - and my background in this area is
limited to other people's fanfiction :-) - Lupin always transforms at a
certain time of the night, for instance, the precise time at which he was
bitten, or the moment when the moon is technically full (the full moon, of
course, doesn't last all night - it is only occurs at a point in time as the
phase of the moon is constantly shifting.)  Thus, the moon appearing is of
no consequence to Lupin, but occured to remind the reader of the full moon.

These aren't very solid theories - but I do hope they made sense.
