Clotted cream revisted

I was out buying big shortbread daisy cookies for my daughter's Daisy
Scout initiation tonight, and passed a little British import shop, and
am now the proud owner of a 6 oz. jar of "English Double Devon Cream,"
which is what the little proprietor gave me when I said "clotted cream."
I also got a box of "Green's Ready to Mix Classic Scones."

Two questions:
What should I make or get to have with this culinary expedition?
On the back of the scone mix, it says "Place the scones on a baking tray
and leave for 5 minutes to prove at room temperature." What's "prove"?
Rise?
