JKR refers to the Beauxbatons students as freezing because

it's really magical- warming when it's cold and cool

(I apologize for being a bit behind - but that's why I lurk, usually.) I
would think due to where they are located WOOL would be the obvious material
English wizards would use for clothing, especially in colder/wetter months.
Wool garments keep you warm even when wet and certainly a wide variety of
wool is available in Great Britain and certainly Scotland, or at least was
before the recent Foot and Mouth outbreak. Wool yarn and knitting supplies
seem to be available through magical channels as Molly Weazley, Hagrid and
Dobby all knit, and I just can't see any of them using acrylic or other
man-made fiber, some of which melt under extreme heat and could be a hazard
considering all the fire and stuff they are exposed to - cooking, making
potions, etc.
They also eat sheep meat products sometimes, and according to Fantastic
Beasts, sheep are the favorite food of some of the magical creatures like
dragons. I would imagine some wizards would probably have to raise sheep or
at least buy them or their products from muggle shepherds.
