Again, I don't have the book at work but in P0A, during the big
Quidditch match, there's a reference to 200 Slytherins wearing green
sitting in the stands behind their goalposts.  The other
three-quarters of the school were cheering for Gryffindor.  Ergo, 800
students in the school.

And I'm pretty sure I read somewhere JKR saying that there were about
1,000 people at Hogworts.
