 Actually, in my very own time line I established for my fanfic, I had him born in 1956- but give or take two years, 56 or 58 is very much the same. So when Harry starts at Hogwarts, Snape would be more or less 35 years old and 39 in GoF, which is pretty much like what JKR said in that interview.
But be honest, all of you: Did anybody *really* have the impression that he was that young, before you heard it from JKR? His language and his behaviour indicate nothing of the sort. If I had made a wild guess before knowing what I know now, I would have said he's somewhere between 50 and 60. Quirrell is explicitly referred to as "young" which, given the longer lifespan of wizards, might very well be something like 30-35. Nothing of the sort about Snape. And as he is very often shown in contrast to McGonagall, as far as fairness and being head of house is concerned, the textual evidence would rather have suggested that his age is nearer to hers.
And, as I mentioned before- this is definitely something for you, Luke, thinking of the analysis about characteristic dialogue- his language certainly doesn't suggest a 35 year-old in the first place, he speaks so very much like McGonagall. Which leads me to a question for our british group members: Is the word "dunderheads" he uses in his speech at the beginning of the first lesson in PS/SS just a word of neutral value, or does it clearly belong to  very familiar, or very high, or very old-fashioned language? To me, it felt rather high level/old fashioned, as did the whole speech.

<Well, it really depends on when this interview was with Rowling. If it was 
<after GoF that means Snape is 36 now and only about 22 years older than Harry.


*sigh*...I missed math class today but of course I come home to math ^_^. 
Hmm...that means that Snape was born in '58 and went to Hogwarts in '69. 
Meaning....0.0 Snape is the same age as my dad at this very second...
