My take on it is that the relationship has been blossoming throughout
the series. Hermione's confusion about Krum shows that whether you
prefer Ron or Harry, she still didn't know for what she wanted,
although perhaps her stint with Krum made her a bit more aware of her
feelings, which is why she kissed Harry.
As to your deeper analysis, I recall one of my junior high friends
telling me about his plan to stage a fake stumble so he could cop a
feel on a girl he liked. This is a very similar situation, I think,
in which Hermione would want to be able to kiss Harry, yet do so in a
way that he didn't get the "wrong" idea; i.e. that she was being too
forward. I used to do similar things myself.
