There's a theory which goes that the Delacort ("of the Court" suggesting old nobility) family is the French equivalent of the Malfoys (which, incidentally, is itself derived from "mal fee," or "evil faery" in French).
According to his line of thought, Madame Maxime secretly takes after her giantess heritage in siding with the Dark. She will first gain Hagrid's trust, and then betray him. The Delacort sisters, too, will betray their Hogwarts friends. It's hard to guess whether the sisters really *do* have Veela ancestry, but aren't Veelas considered Dark as well?
All the business of Karkakoff being a former Death Eater will be significant, but also serves to distract the audience away from the Beauxbatons. Karkakoff didn't return to the Death Eaters. The Malfoys didn't let Draco go off to Durmstrang, suggesting that those "in the know" realize it's not the elite bastion of Dark Arts for the New Age that it wants to become.
