Two points of clarification:

1)  Dean is mentioned in PS--just not in that scene.

2)  The details might have been added in the SS edition to:  a) 
appeal to a wider audience, and b) because it's an aspect of Dean's 
character we would have learned about anyway.  The casting of Alicia 
Spinnet shows that JKR's ideas of the characters and our ideas of the 
characters may be diametrically opposed.  But in the end, she's the 
author and she wins.  Simple as that.
