I can't answer the question of why the changes, but I
wanted to throw a further tidbit into this one. The
Canadian edition of GoF refers to neither a 'murder'
or a 'curse', but reads 'one more obstacle removed and
our path to Harry Potter is clear.'. That then raises
the question of why there are 3 different versions.
