I believe the page torn out was the one with the information about
the Basilisk. I was also a bit shocked she had done so and had
written a note on it to boot! :) I figured she got away with it due
to the fact she was working to stop the basilisk- a creature on the
loose Petrifying students- a task a bit more important than being
nice to library books.
Besides if she had been Petrified with the whole book in her
hand I'm sure someone may have thought to look through it (well,
maybe) and shortened CoS by a few chapters and killed a bit of
suspense.
