I think you have a good point there.  I also get the feeling, based 
on Snape's speech in PS/SS, that he feels that the whole field of 
potions is underappreciated by the magical world at large.  It's not 
glamorous, it requires a lot of time, work, and some rather gross 
ingredients, the end result is a cauldronful of liquid instead of a 
flashy display -- people just don't understand the brilliance it 
takes, dammit!

It's ironic, really.  Snape seems to be a man who really wants to be 
respected.  Yet he works in a disrespected field, heads a 
disrespected House, and, of course, spying is one of the most 
disrespected things one can do in a war.  The guy is doomed to a 
life of frustration.
