If Draco does notice Hermione, I too believe that it's all hormones. 
In GoF, the Yule Ball, even Draco couldn't find an insult to throw 
at Hermione because Hermione was looking pretty at that time. 
Definitely just hormones. IMHO, that is.

Still, I am intrigued by the slapping incident PoA, where Hermione 
slapped Draco and all Draco did was mutter "c'mon" to his two thugs 
and left.  In all honesty, I haven't got a clue what's Draco's motive 
behind that. Was he simply scared of Hermione? Or maybe he did not 
want to cause trouble? But why? He could have hexed Hermione right 
then and there. But he left. Now as I said I didn't know what could 
have been going on inside Draco's head at that time. But I want to 
believe that Draco is hopefully still redeemable, and there's a 
spark of basic human goodness left in him. We really do not know 
much about Draco aside from the horrible git that he is in canon.  
But we don't know if he's abused physically. We don't know what kind 
of father Lucius is to him. We don't know what kind Narcissa's and 
Lucius's marriage is. So I really find it hard to think that Draco's 
all evil. I, too, can't wait what Draco will do when he comes face 
to face with a decision he himself has to make, and not his 
father.
