While reading your theories, a third theory occured to me. Mrs. 
Norris knows how much being a squib pains Filch, and in an effort to 
give him a quick fix peruses many a forbidden volume, either at 
Hogwarts or elsewhere.  I remember Ron telling Harry to be careful 
when looking through magic books.  There was one that you couldn't 
stop reading for the rest of your life and another that had the 
reader talking in rhyme, also without cure.  Perhaps Mrs. Norris 
wasn't careful, was turned into a cat, and the book's spell is even 
beyond Dumbledore's ability to fix. At least at Hogwarts they're 
still together, and hopefully Dumbledore (or somebody)is working on 
it!
