Well, that first bit from the book just supports what I think is 
going on.  The dementors don't suck away your happy thoughts, they 
just suck in the happiness(perhaps some sort of energy?) they've 
stolen.  If you're feeling good and all of a sudden a dementor pops 
up, you fall from that good feeling to reliving some of the worst 
memories of your life.  You experience a big drop in your emotional 
status, and I think the dementors sort of "feed" off of that.  They 
are said to be in places of despair and filth, so I think what 
they "feed" on is taking something relatively good and bringing it 
down to their level of despair. In the case of wizards, I think the 
way they feed is by taking a functioning, happy wizard and slowly 
bringing them down to a half-crazed, depressed, can't-even-cast-a-
spell shadow of a human being.
