They do have a B-team. In PS/SS (I think, I dont have the books right 
now) Lee Jordan comments that Angelina (or possibly one of the other 
girls) was just a reserve the year before. To me it seems that this 
makes it clear that they have a reserve team or maybe more than just 
one reserve for each position. The only position that we know there 
is no reserve for is seeker (In PS/SS Harry says that he has to play 
even though Snape is refereeing the match because there is no 
replacement).
