Yep, Dumbledore KNEW that Buckbeak was saved, but Harry
and Hermione most likely had NO clue.  They *heard* the ax,
but didn't see that it was into a piece of wood.  That may have
been what made him realize that his "future" self had 
done something to influence the past that he had
just lived through.

He knew they had saved Buckbeak, and he may have been
wanting to ensure that they would think to do it, again.  Given that it
took them a while to figure out what Dumbledore meant I 
guess that he may have figured that saving Buckbeak wasn't
what was on their minds and he felt that he should make
sure they knew that they had TWO missions that night, not
just saving Sirius.
