Also, as far as Snape is concerned, Hermione is a "know-it-all": someone who 
by definition acts as if she knows more than she really does.

Also, Snape may know a piece of the story that he thinks Hermione doesn't 
know: that Black betrayed her best friend's parents.  Add to this the 
likelihood that Snape was the spy who tipped off James and Lily, and we get 
a Snape who is very personally involved in this drama and has been for 13 
years.  In his mind, he is the champion of the Potters (who keep getting 
themselves killed in spite of his best efforts), while this naive girl is 
friends with Harry but doesn't even know the *real* story behind him, his 
parents, and Black.  And he would be right, except that Hermione *does* know 
the story thanks to Fudge.

In any case, it makes perfect sense for Snape to say to Hermione, "don't 
talk about what you don't understand."
