Well that's easy enough to explain.  The mirror gives "Neither knowledge nor
truth."  Simple enough.  It took a combination of the memories Harry had of
his parents and showed him them along with nonexistent people who had
similar features.  The eyes, the knees, the hair, and so on.  I personally
think the only "real" people the mirror showed were Harry, James and Lily.
Just because the mirror showed things it doesn't mean they were real.
