It is *possible* (based on the way some things are set up in *some* British schools) that seventh, and also possibly sixth years, do not meet in classes the way the fifth-and-below students seem to.
In other words, after one has taken his/her O.W.L.S. and is readying for the N.E.W.T.s, "classes" may take the form of smaller sessions at rare and unusual times, combined with independent studies.
This would allow you to just not schedule any Potions, Charms, DaDA or Transfiguration classes for the upper forms - treat them like electives instead, in terms of newt-level work.

Hi, everyone. I'm Three Sickles Short--TSS for, erm, short ;-)--and
I'm new here. This has probably come up before, but I can't find a
direct answer in the FAQs, so here goes: I'm trying to come up with
a master class schedule for the fifth-year fic that I'm writing, and
it's giving me fits. According to the rendering of Harry's Book 4
schedule at the HP Lexicon (check it out at
http://www.i2k.com/~svderark/lexicon/calendar_gf.html), we have 4
class periods per day (2 before lunch and 2 after) 5 days per week.
This works fine so long as you're only trying to worry about Harry's
schedule, but gets troublesome when you try to work in all 7 years.
Take, for instance, Potions. If Double Potions meets for 2 periods
per day twice a week, you need 28 periods to get all the classes
accommodated (7 separate classes meeting four periods per week), and
the Lexicon schedule only gives us 20 periods. Even if the classes
are only double classes once a week, you'd still need 21 periods (7
classes times 3 periods per week). There just isn't room for all the
classes in a 20-period week. However, the Lexicon is right that the
books' evidence seems to indicate a 20-period week. What to do? I'd
appreciate any help at untangling the schedule.
Thanks!
