Dumbledore says that Flamel has enough elixer to put
his affairs in order. My guess is that it doesn't take
YEARS to put ones affairs in order, even if you have
lived for centuries.

Dumbledore says to Harry "They have enough Elixer
stored to set their affairs in order and then, yes,
they will die".

If there was that little elixer left, there likely
woulden't be any left over to ressurect Harry, if that
is possible.
