I think it's simpler than that. The writing on the Map is miniscule,
very very tiny. It's not likely that you can read anything by
accident. You only read what you are focused on. Lupin is specifically
looking to see if Harry/Ron/Hermione go down to Hagrid's, so he focus
is very narrow.
Also, some suspect that while they are within the boudaries of the
forest, they are not on the viewable area of the map. We know there
are dead spots on the Map, these have been pointed out before. Lupin
doesn't see them in Hagrid's hut, so possible the forest is one of
these dead spots.
Just a couple of additonal thoughts.
