First of all, in the movie Ron said that.  In the books, it was 
Hagrid.

About Hagrid and Snape's relationship.  I think you are right in a 
sense that Hagrid trusts Snape because Dumbledore trusts him.  I also 
think that in many ways, Hagrid and Snape are similiar, and Hagrid 
sees that.  They're both people who most of society would have 
shunned and carted off to Azkaban.  Yet Dumbledore gave both of them 
a second chance.
