I don't believe Hagrid would have been able to learn such a complex
transfiguration.  In the first book, he can't even manage to transform
Dudley into a pig, which seems to me to be far less complicated. 
Besides this, he has no magical training and no wand (not a complete
one, anyway) with which to perform the spell.  It all just seems
farfetched to me, given his demonstrated skill level.
