There are too many! But I defintely know that one of my favorite
scenes is in PoA:

There was a moment's silence. Then-
"Fine!" said Hermione suddenly, getting up and cramming 'Unfogging
the Future' back into her bag. "Fine!" she repeated, swinging the
bag over her shoulder and almost knocking Ron off his chair. "I give
up! I'm leaving!" And to the whole class's amazement, Hermione
strode over to the trapdoor, kicked it open, and climbed down the
ladder out of sight.

Not only did I wish I had those guts when I was that age, but I
think it's such a defining moment in Hermione's character, perhaps
the most defining moment for that character in the series to date.

And also a favorite from PoA (this from Snape to Harry): "What would
your head have been doing in Hogsmeade, Potter? Your head is not
allowed in Hogsmeade. No part of your body has permission to be in
Hogsmeade."

I can't help but snicker every time I read that. I hope these both
make it into the next film!
