Well, I could at any time randomly pick up any one of the four books, open it anyplace and probably find something I'd be giggling over and insisting was my favorite quote.  My mom says everything's my favorite.  But the first thing that came to mind was this, from PoA:

Standing over them, with an expresion of the utmost fury on her face, was Professor McGonagall.
"An unworthy trick!" she was shouting.  "A low and cowardly attempt to sabotage the Gryffindor Seeker!  Detention for all of you, and fifty points from Slytherin!  I shall be speaking to Professor Dumbledore about this, make no mistake!  Ah, here he comes now!"

Gets me every time!
