I always attributed that to the fact that Harry *likes* Dumbledore.  I know 
in my school we used to call people by their last names if we were friends.  As 
we got older though, it became reserved for people we  don't like.  Harry 
calls Severus just plain ol' Snape because he doesn't like him.  Very strange 
though...
