I think that perhaps Hermeione stays at Grimmauld Place not because 
she wants to but because she needs to.  When the advance guard picks-
up Harry, they tell him that the Burrow is no longer safe.  Surely a 
similar threat would extend to the home of the Boy who Lived's best 
friend.  She could be used as leverage in negotiating the surrender 
of Harry or the professy.  She could tell the DEs all about Harry and 
his weaknesses.  We know from his recognition of Hermeione at the 
bookstore in CoS that Lucius Malfoy knows that Hermeione is close to 
Harry.  I think that the Order has asked Hermeione to join them for 
her own, and her parents, protection.
