Snape did remember that the memory is in there and is his, so seems he
has some residual memory of the event. Well either that, or he just
remembers that he did put some of his memories in the pensieve that he
needs to retrieve. I guess it depends on how fully the memory is
removed. It cannot be so removed that when he looks in the pensieve,
the memory is "new" to him. Some residual memory must be retained so
that he does still know this is what happened to him.
Mostly I think he wanted the memory back in his head for the one
reason it is safer in there. Out in the pensieve, even brats like
Harry can reach it. In Snape's head, the memory is tucked away from
his to simmer and spit over the rest of his life until he deals with
it. Though now that he has out lived both Sirius and James, I wonder
if Snape feels he is at last "best" than them. Or, at least, better
at surviving...and maybe dueling.
