Debating the whys and wherefores of the books is fun, that's why
we're here!
How about another possiblity?:
We now know Snape is an Occlumencer (spelling? oh heck.). We also
know that V is a Legilimus. Snape knows his own limits in the "O"
skill and knows that he cannot possibily have any memories of eating
with V's enemies or any memories of being civil to Harry. Memories
of that type are potentially dangerous to a spy. It's similar to the
reason he used the Pensieve before giving Harry private lessons in
the "O" skill. He doesn't want "anybody" to tap into certain
memories and he can't risk giving away the people who are also
members of the order.
Of course, he's still walking around with memories of perfectly civil
conversations with DD in his head, unless he removes those into a
Pensieve before he meets with the Death Eaters, V, or their allies
(or whatever he's doing).
