While it is certainly possible that JKR is having a bit of fun of her 
own with us, I think it's important that this tidbit follows the 
general pattern of other things which became important, and did not 
turn out to be red herrings. The general pattern that she uses is 
that she flips a detail into the story in the middle somewhere, and 
then later (chapters later, *books* later) drops in the context that 
makes it significant. 

Here, she drops Mark Evans's name in the first chapter, and then 2/3 
of the book later, she slides in that James was mooning over "L.E." 
and they called Lily "Evans." 

Here's the question: I know that JKR answered in an interview 
somewhere that Lily's maiden name was Evans. Does she mention it in 
canon anywhere, or is this the first drop of it? If so, I think it 
fits the pattern of "could be important."
