I have a theory on this.  The way the scene plays out, we see the 
boggart change into all the Weasley boys, and then it changes into 
Harry.  At that moment, Harry notices that Sirius, Lupin and Moody 
have come into the room, but it's not clear exactly how long they'd 
been there.  A few paragraphs later, JKR specifically mentions 
Sirius staring intently at the spot on the carpet where "dead Harry" 
had been earlier.  

I think that when the others ran into the room, the boggart got 
confused and began to switch (as PoA Lupin said it would when 
confronted with multiple victims).  The image of dead Harry was 
Sirius' boggart, not Molly's.  If the boggart had remained focused 
on Molly, Ginny would've been next.
