First, that memory does no indicate Snape was lousy on a broom.  The 
broom was bucking, if I remember correctly.  That's not normal.   
Someone had to do somethig to that broom.  Don't get me wrong; I 
don't think Snape was an exceptional flier.  I just don't see any 
reason to believe he was particullarly bad.

As far as the flies, he could have been using Avada Kadavra.  I 
don't think so though.  Harry didn't "mention" a green light.  I'm 
sure there must lots of curses that can kill.  I think Avada Kadavra 
is just the only one that there's no real defense against.  Flies 
can't do much to defend themselves anyway.
