Harry and Hermione didn't change history in PoA when they travelled back in
time to save Buckbeak and Sirius.

They thought that they'd heard Buckbeak being executed, and Hagrid crying
because of this. On their second visit to that time, they heard EXACTLY the
same thing, but their new perspective showed them that they'd misinterpreted
the sounds in the first place.

So time wasn't written by the 'victor', simply by the events that occurred.
That three hours only took place once, it simply had two occurrences of
Hermione and Harry.
