I'm not sure if Snape was the eavesdropper, but there's a possibility
that Mundungus might be the eavesdropper
"He was banned from the Hog's Head 20 years ago," said Sirius, "and
that barman's got a long memory. We lost Moody's spare Invisibility
Cloak when Sturgis was arrested, so Dung's been dressing up as a
witch a lot lately....... (US p. 370)
Also:
"He's useful,' Sirius muttered. "Knows all the crooks- well, he
would, seeing as he's one himself. But he's also very loyalto
Dumbledore, who helped him out of a tight spot once. It pays to have
someone like Dung around, he heard things we don't...." (US p. 87)
This might also explained why Molly got so angry at him for
endangering Harry (yet again) at the beginning.
Since he was banned 20 years ago while the prophecy was made 16 years
ago. So may be he sneaked into the bar 16 years ago at that night and
was spotted by the barman, so that's why he got thrown out before he
could hear the entire prophecy.
