Your first paragraph I agree with completely (nice thought about
Bill and Charlie and Percy, too). I have a different idea about
what makes Molly afraid of Sirius' relationship to Harry.
I think Molly is afraid of losing any of her family, including
Harry, to *Voldomort*. Although she can try to do something to keep
the youngest Weasleys out of the fight, she is desperate to stop
Sirius from involving Harry in it. This attitude echoes what we
know of her feelings in GoF when Charlie (I believe) reports that
Molly was happy when she thought that the changed TWT rules would
prevent any of her loved ones from participating; when she found out
that Harry was involved after all, she was "having kittens about
him". Perhaps she thinks Sirius is seeing Harry too much like James
(a comrade-in-arms) and not enough like a child who needs the
adults' protection.
I think Molly is misguided but very understandable, especially after
seeing her boggart. What she said to Sirius was horrible but born
out of great stress and fear for Harry. She lashed out with the
biggest thing she could think of. It was one huge mistake made by a
very good person.
