Actually what she said was he was sent home when he
changed his teacher's hair blue, not his own hair. I
think he gladly would if he could, at least before he
went to his date with Cho.

Me -

No I think he/she meant that PS says that Harry had some kind of haircut
when he was younger and the next morning it was back to how it was.
Obviously unconscious, which would be understandable. If he is a
metamorphmagus but hasn't really learnt to use his abilities consciously
then any unconscious manipulation of his image would automatically change to
his self-image ie how he sees himself in his head. he knows his hair looks
like it does so he unconsciously put it back when it was altered.
