I like Cho's character as well and still do.  In OOPs, she's portrayed more as an average teenage girl, like Parvati and Lavendar.  Harry acts it out with his angst and Ron with his concerns of Hermione.  I wouldn't be surprised if Harry dates Ginny, Cho, and a number of the other girls at Hogs.
 
It's refreshing to see their characters evolve into real teen personalities and reminds me of back in the day when I was a teenager.

I know a lot of people thought Ginny and Harry. And
before OOPs, I didn't like this idea at all. But in
OOPs Ginny shined. She's over her idolizing stage with
Harry. She's shown that she's a great flyer/Quidditch
player (like Harry). She has a great sense of humor
like Fred and George. She's daring and brave (like
Harry). She may be the one for him.

On page 866 of OOP (US edition)after Ginny's tells Ron
that she ditched Michael Corner, he says 

"Well, I always thought he was a bit of an idiot"....
"Good for you. Just choose someone--better--next
time."
He cast Harry an oddly furtive look as he said it.

I see this as hint from JKR. I see Ginny blossoming in
the next 2 books and Harry noticing her first time and
seeing her differently. Maybe!
