I think that Hermione can be more affectionate with Harry because 
they are just very good friends.  Both she and Ron tend to hesitate 
with their affection towards one another because there is more to 
their feelings, they tend to grow shy with one another.

I also interpreted Hermione's "business" like manner when I read it 
to mean that she was trying to take the "embarassement" out of such a 
discussion.  Harry would not have been able to discuss it had she 
also acted like Ron - silly and imature.

We need to look at the bickering that is happening between Hermione 
and Ron, a lot of it as Harry complains.  This is their acting out 
the deep feelings they have for one another but are unwilling to yet 
see it for what it is.  "The passion underneathe".
