Just an off-the-wall theory (like most of my theories) but how about 
this:  Snape is the one who overheard the prophecy.  Only he 
overheard it ENTIRELY (so Dumbledore is lying about that).  He had 
become a death-eater in the first place because they seemed to be 
the "winning team", but now he sees a real chance to defeat LV, and 
so defects to the other side.  He discusses the prophecy with 
Dumbledore, and they decide to have Snape feed LV only the first part 
of the prophecy, pretending that he did not hear the whole thing.  
This prompts LV to attempt to kill Harry, which of course is a big 
mistake.  This is why Dumbledore trusts Snape: he was instrumental in 
bringing about LV's first downfall.

Obviously neither Dumbledore nor Snape would want Harry to know about 
this.  If Harry found out, he would not see it in the same light as 
they did.  While it directly led to LV's downfall, it also led to the 
death of his parents.

Also, this would explain why LV thought Snape was "afraid to return" 
during the graveyard scene in book 4.
