JMHO here...  Snape as well as Ron and Hermione realized Harry's 
broom was being cursed, so he was simply following through on his 
debt to James. (and I think Dumbledore would have pre-warned Snape 
that Harry will need "watching" over during his years at Hogwarts)  
As a teacher, it is his duty to keep any student safe though.  It was 
not as if he knew this was being done to further Moldywart's cause 
(just my assumption here), so he couldn't be accused of working 
against him.  Did Quirrel mean Snape suspected him of wanting the 
stone or that he was working for Moldywart?  I had taken it as 
meaning Snape suspected him of wanting to get at the Sorcerer's... 
Philosopher's...  oh heck, Flammel's Stone.
