"The Hog's Head Bar comprised one small, dingy, and very dirty room 
that smelled strongly of something that might have been goats."

In one of the earlier books Dumbledore tells Harry that his brother 
Aberforth got in trouble for performing an "inappropriate charm" on a 
goat.

The physical description sounds like Dumbledore: (pg. 336)
The barman was "a grumpy-looking old man with a great deal of long 
gray hair and beard. He was tall and thin and looked vaguely familiar 
to Harry."

Isn't this just more of those maddeningly subtle hints and references 
that we all love to grab and run with?
