I'm thinking the same thing - that Umbridge will be back in book 6 
or 7, perhaps as an open supporter of Voldemort.  She'll think that 
Fudge has turned out to be a weak reed, so Voldemort is the one 
who'll REALLY get things done as far as the non-humans are 
concerned.  It's very unclear at the end just what's going on with 
her; it's suggested that she's in shock, but we don't really know, 
any more than we know what happened to her when she was taken away 
by the centaurs.  I have an uneasy feeling that while she was in the 
infirmary, she was thinking over everything she'd been through, and 
thinking how much she'd like to be revenged.  She doesn't seem like 
the sort who forgets an injury.
