I think Snape isn't so careless about other people's feelings as he 
pretends to be . That's why I honestly believe he wanted to keep 
Harry from seeing the truth about his father and therefore removed 
the significant memories from his head before starting the lesson. 
Still it is a bit difficult for me to understand Snape's behaviour 
after he discovered Harry in the Pensieve. He even used violence 
against a student !
I think he feared that he(Harry) might have seen something else than 
just the scene with James. Who knows what dark secrets are hiding 
inside Snape's Pensieve ... someone with such a past does surely have 
much worse memories than that .
